Discover the Excellence of Fermentation on Real Crushed Grapes AMARONE STYLE Amarone is a legendary, assertive wine from the Valpolicella area in northern Italy. It's uniqueness and character comes from the addition of partially dried grapes during fermentation. Dried grapes boost flavor concentration and create an intensity not found in regular wines. After 2 years of development, Cellar Craft has created a new process resulting in the most impressive Amarone style that you have likely ever experienced. Our new "SUPER PACK" of crushed grapes and whole, sun-dried grapes is added to the juices for traditional on the skins fermentation character and the maximum infusion of the concentrated, natural essence within the dried grapes. In all, 14 pounds of virgin, vinifera, varietal grapes are used to produce the SUPER PACK; 40% more than our regular "Crushed Grape Pack"! CABERNET SHIRAZ Yakima Cabernet and Syrah (Shiraz) are compared to the great wines of Australia while having their own particular brand of charm. This exclusive "Crushed Grape Pack" has all the natural solids of over 10 pounds of virgin, Cabernet grapes. This makes the ultimate difference essential to create the generous fruit character, full, ripe tannins and amazing depth expected from these big grapes. The wine releases smooth fragrances of blackberry, plum, cherry and candied orange. The palate is then impressed by notes of current, fig, cedar and spice which are intertwined with a beautiful balance of toasted oaks. The finish is rich and elegant. Powerful flavours of fruit start to come together after 2-3 months of aging. After 6 to 12 months the tannins soften and the wine's elegant charm really starts to reveal itself. This wine can be cellared for more than 2 years. CALIFORNIA SANTA YNEZ VALLEY SYRAH Look for our new CrushendoTM grape pack to add more flavor and body intensity than ever before. This will be an enhanced deep color and full bodied wine. Aromas of blackberry, smoke, plum, "jammy" fruit and a hint of black pepper spiciness lurking in velvety tannins. Flavors of blackberry, blueberry, herbs, black currant toast and vanilla. CHATEAU DU PAYS In the style of the finest wines of the southern Rhone Valley, this wine derives its character from the blending of several grape varieties. We have selected European Pinot Noir and Yakima Merlot for cherry, raspberry, blackberry and plum tones. Yakima Syrah was selected for its fruit, black pepper and chocolate. Yakima Cabernet Franc adds an herbaceous note and a suggestion of cedar and violets. Fermentation on the crushed Merlot, Syrah and Cabernet Franc grapes develops heightened intensity of aromatics and flavour, contributes tannins and builds upon the many intriguing layers of sensory pleasure. American toasted oak adds the final harmonizing nuances. This wine shows well young but will continue to develop for over a year. CORVINA CLASSICO DI VENETO The power grape of Italy's famed Valpolicella, Bardolino and Amarone, Corvina is renowned for fruity, full-bodied wines with cherry aromas and a hint of almond. The Veneto region stretches from the northeast border with Austria down to coastal Venice, with a mild continental climate ideal for long, controlled ripening and intense grapes. Corvina Classico has lush, intriguing aromas of ripe red cherries and raspberries, delicate hints of almond, toast and spice and a richly tannic finish that has the fruit lingering on your palate for many minutes.

MONTAGNAC VIEUX CHATEAU D'OC Named for Occitan (oh-kit-onh)
the language of ancient troubadours, this wine is a special blend of the
renowned grape varieties traditional to the region: Mourvedre, Carignane,
Syrah, Cabernet, Sauvignon and Viognier. Vieux Chateau d'Oc is a bold
wine, ruby red in color with a deep, dark plum and blackberry bouquet
showing subtle accents of chocolate. Rich, lush and complex, soft
black fruit combines with a hint of spiciness that follows through with a
firm, tannic finish on the palate. OLD VALLEY ZINFANDEL Direct from the vineyard in Lodi where sandy, clay loam soil: hot days,
cool nights and 35 year old vines combine to produce unique grapes bursting
with complex, concentrated flavours. Enjoy your first bottles after 2-3 months when the powerful fruit flavours dominate. However, after cellaring for months or years the taste is a more refined balance and the vast array of characteristics which time integrates into harmonized waves of complexity. ROSSO FORTISSIMO A Super-Tuscan styled wine vinted from Cabernet Sauvignon, Merlot and native Italian varieties. A big, full-bodied wine with solid structure and bold fruit notes coming from fermentation on crushed Merlot grapes. Eighty grams of French and American oaks contributes toasty vanilla and perfect balance to this intense wine. Extended aging, for a year or more, will allow this wine to mature to a harmonious delight. WASHINGTON STATE MERLOT Bold, yet elegant. This Yakima Valley Merlot is big, full and with dominant, up-front waves of raspberry, blackberry and plum from fermentation on crushed Merlot grapes. Subtle notes of cedar and mocha follow the fruit. American oak balances the tannins and brings harmony to the complex impressions. This wine shows well after a couple of months but will continue to develop for at least a year. YAKIMA VALLEY SYRAH Some of the best Syrah in the world is now coming from Washington's Yakima Valley. In this wine expect to discover an aromatic rush of red and black fruit; hints of chocolate, coffee and licorice followed by the spiciness of black pepper. Fermentation on Syrah skins lifts and adds to the luscious texture and creamy tannins. Toasted Hungarian oak completes the sensory profile. Enjoy after a few months or cellar for over a year to appreciate the wine's full potential. |
